Apple Pie Overnight Oats

Apple Pie Overnight Oats

It is no secret I'm in love with my Creamy Pumpkin Pie Overnight Oatmeal. I've been eating it every morning for months, but every now and then it's good to change things up. Fall fruits are my favorite to mix with oats...pumpkin, apples, raisins, cinnamon...its like having dessert for breakfast. I even joked with a friend today that I wake up every morning looking forward to breakfast...like skip the snooze button to get to the fridge and heat up my breakfast look forward to it. Plus, its little gift from heaven when the peanut butter gets all melty and gooey over the top of the oatmeal. Trust me, its amazing. I hope you love these as much as I do. Enjoy.


Ingredients:
1 large apple, any variety (I prefer Jazz or Fuji)
2 tbsp reduced sugar Craisins or raisins
1 tbsp coconut oil
1 packet of Stevia
¼ tbsp apple pie spice
2/3 cup old fashioned oats, not instant or 5-min oats
2 tbsp chia seeds
1 scoop of Whey protein, vanilla or cinnamon flavor
3/4 cup Unsweetened Vanilla Almond Milk
½ cup cottage cheese, 2 or 4% but not fat-free
½ tsp vanilla extract
¼ tsp cinnamon
2-3 tbsp real maple syrup
2 tbsp natural peanut butter or almond butter
*2 servings


Method: 
1   1. Clean and chop apple into small pieces, approximately 1/2 inch cubes .  Warm coconut oil over medium heat and add chopped apple, craisins/ raisins, apple pie spice and stevia.  Cook until apples are softened, but not mushy. Remove from heat and set aside.
2   2. In a mixing bowl, combine remaining ingredients and mix well.
3   3.  Divide oat mixture between two air-tight containers, such as mason jars.
4   4.  Top each jar with ½ the cooled apple mixture and refrigerate overnight.

5   5.  In the morning, warm oats for 1 minute and stir well. Microwave for an additional 20-30 seconds and stir again. Top with 1 tbsp of almond butter or peanut butter and enjoy.

Creamy Pumpkin Pie Overnight Oats




If you follow me via Instagram, you've probably witnessed firsthand my current obsession with Creamy Pumpkin Pie Overnight Oats. I've been eating them for breakfast for so many days in a row now that I don't even post pictures of it anymore.

Breakfast is absolutely my favorite meal of the day. Sadly, so many of the things that come to mind when we think of amazing breakfast foods are not so good for you. These oats give me that "wow, these are delicious" feeling of eating something warm and satisfying without downing a giant-sized calorie-bomb of a cinnamon roll.

In fact, since I don't want to give these up, I've resorted to eating my other favorites as "breakfast" for lunch and "breakfast" for dinner. I remember as a kid thinking it was such a treat when my mom would come home from work and declare it a Breakfast For Dinner night. It's all just food, right? Eggs for dinner aren't really any different than a chicken breast for breakfast if that's really what sounds good, but those were some magic words in my seven-year-old mind. So that being said...feel free to have some overnight oats for dinner tonight!



Here's the recipe:
1/3c Old Fashioned Oats (not quick or instant oats)
1/2 scoop of Cinnamon or Vanilla Whey protein powder (optional, but recommended. I like About Time Cinnamon Swirl)
1/2tsp ground cinnamon
1tbsp Chia seeds
1/4c low fat cottage cheese
1/4c unsweetened vanilla almond milk (or milk of choice)
1/4tsp vanilla extract
1/4c pumpkin puree
1-2tbsp Maple sryup or sugar-free maple sryup
(Reserved) 1tbsp natural peanut butter or nut butter of choice (top warm oatmeal with peanut butter just before serving)

Mix all ingredients well in a air-tight container and store in refrigerator overnight. In the morning, remove the lid and microwave for 1 minute. Stir thoroughly and microwave for an additional 30 seconds or until the cottage cheese is melted and oatmeal takes on a creamier texture. Top with peanut butter and chow down.

***Quick disclaimer: If cottage cheese is not your thing, you should still give these a try. Once the oatmeal is warm, you'd never know its in there! It makes these oats creamy and packs a good protein and calcium punch.



















I make five servings at a time to last the week. It is just as good the first day as it is the last. Just make sure to choose air-tight containers to keep your oats fresh.

I hope you love this easy, healthy breakfast as much as I do. Its the perfect start to your Fall morning, plus with only 10 minutes of prep involved in making an entire week's worth of healthy breakfasts, you'll have plenty of time left to squeeze in a walk around the block or get a jump start on your meal plan for next week. Peanut Butter Cookie Dough Truffles







Something about the word "truffle"...sounds...well, delicious. And so much tastier than Peanut Butter Cookie Dough Balls. Call them whatever you want. These are good.




Step 1:

Add all the ingredients, except for water and chocolate chips to the food processor bowl. Use the pulse button to combine. The mixture will be dry. Add about 1/4 cup of water and continue to pulse. The mix should begin to come together. The dates will hold all the ingredients together, but depending on the moisture level of the dates and the absorbancy of your oats and protein powder, you may need to add more water. My batch needed about a 1/2 cup total. You don't want to it to be runny. It should be very sticky and thick. **A note about Madjool dates. They have pits that you must remove! If you forget your food processor will not thank you, either will your teeth should you bite into one**
Step 2:
Remove the dough into a bowl and refrigerate for 10-15 minutes. It will make it easier to roll into your truffles.
Step 3:
Roll dough into 20 golf ball sized truffles. I only got 18 out of mine, but that is because I ate the dough right out of the food processor.
Step 4:
Refrigerate your rolled truffles for 10-15 more minutes. While your truffles are chilling, melt about 1/3c of dark chocolate chips in a glass bowl. I prefer to melt them in the microwave because it the easiest. Just put them in for 20 seconds at a time until smooth. It took 40 seconds total.
Step 5:
Dip the bottom half of each truffle into the melted chocolate.
Step 6:
Once the chocolate hardens they are ready to enjoy. Refrigerate any leftovers.



Peanut Butter Cookie Truffles


12 pitted Medjool dates
1 c Old Fashioned Oats
1/4 c PB2 or natural peanut butter
1 c almonds
1/3 c unsweetened dried coconut flakes
1.5 scoops vanilla whey
1/2 tsp cinnamon
1/2 c water (Approx- maybe more or less) added gradually

1/3 c dark choc chips, melted (optional)

Is it snack time yet?

I hadn't planned on writing another post until this weekend. But like I said yesterday, kids get sick and guess what?..my kid is sick. Instead of the gym I got a trip to the pediatrician's office and a prescription for oral steroids. My poor baby is having a rough day, but at least she's resting now.

This morning I helped host a breakfast for the teachers at my older daughter's pre-school. I don't think I have to tell you how hard it was to stare down those doughnuts, bagels, and homemade monkey bread. By the time I made it out of there my sweet tooth was screaming at me. FEED ME!

After we got home from the little one's doctor visit, I got out my new favorite…PB2 and Fuji apple slices. This stuff seems a little weird at first glance. I mean powdered peanut butter...really? But it so good! You just mix it with a little water and get ready to dig in! I have it in both the regular peanut butter flavor and chocolate peanut butter. Today I had the chocolate, and let me tell you, it is lick-the-bowl good!

So, you are wondering what the powder is, right? PB2 is made from roasted peanuts that are pressed under, I don't know, a zillion pounds of pressure so the oil is released from the peanuts. What is left of the peanut becomes the awesomeness that is PB2. The best part is, for around 120 calories (for a medium apple and a serving of PB2) you can have a snack that tastes totally bad for you, but isn't. And bonus...you're getting 5 grams of protein and only 3 net carbs. It's also tasty in smoothies, mixed in your morning oats, stirred into yogurt, on toast or just about anywhere you want a little peanut butter flavor without the fat and calories of traditional peanut butter.

I couldn't find PB2 at my local store, but a quick browse on Amazon and it was on my doorstep! It is worth it people! Yum!

And, yeah, you'll all have to pardon my paper plate. Don't judge me, people. I can't be the only one who uses these things, right?


**UPDATE** 
I'm still in love with this snack but I found a way to do what I though was impossible...make it better. So take your two tbsp serving of PB2 and add a few shakes of cinnamon, then mix with 1 tbsp of water and WOW. It is soooo good!
